Nigerian Chicken Pie: How to make Buttery Chicken Pie

Nigerian Chicken pie is very similar to Nigerian Meat Pie in filling and also with the pastry. The only difference is that the Nigerian Chicken pie is stuffed with minced or shredded chicken while the Nigerian Meat pie is stuffed with minced beef.

They both have the same vegetables for the filling (chopped potatoes and carrots). Both pastries are common in Nigeria and most parts of African countries.

Nigerian Chicken pie is buttery, flaky, crispy and delicious. If you want to enjoy this really much, don’t be stingy with your butter or margarine.

Most times, I use butter for my recipes because butter is less oily than the margarine.

And some other times, I make them 50/50. For example, if the recipe says 200 grams of butter/margarine. I’ll use 100 grams of butter and 100 grams of margarine.

Why is my Pie not Buttery and flaky?

I’ve got some questions on my mail, and this is one of them. The key factor of getting perfect results when it comes to pastries and baking is accuracy. Your measurement has to be accurate.

I’d say where this problem comes mostly from is with flour measurement. The confusion between grams and cups. Honestly, at one point in time in my early days of baking, I also had a problem with measurement accuracy.

This is because there are variations in cups used in different countries, the American standard cup is different from the one we use in Europe and some other parts of the world.

I’d say if you enjoy baking so much, dish the cups and start using kitchen scales. The kitchen scales are more accurate. Can I Fry Chicken Pie?

How can I preserve Chicken Pie?

This can stay in the refrigerator for 5 days and up to one month in the freezer. All you just have to do is to reheat in the oven or microwave for a few minutes before consumption.

How to Prepare Chicken For the Filling

For this recipe, I’ll be using the chicken drum sticks because it has less bone and it’s juicy but you can use any chicken part of your choice.

  • The first thing to do is to wash and season the chicken. I seasoned with some salts, curry powder, thyme, cayenne pepper, 2 chicken seasoning cubes. Then in a food processor, I added some olive oil, 1 onion, 1 clove garlic, and 1 small fresh ginger. I blended everything together and added it to the Chicken.
  • mix everything together, cover to leave in the refrigerator for about one hour or if you have the time, you can leave it longer. The longer it stays in the refrigerator the tastier it is.
  • Cook the chicken until a bit tender, then transfer the chicken to the oven for another 8-10 minutes at approximately 175 degrees C. This way, you’ll enjoy every bite of the chicken pie with this smoky flavor. Keep the chicken broth for later use.
  • Remove and allow to cool, shred the chicken into small pieces with your hands or food processor. Then set aside.

How to prepare the Filling

  • On low heat in a deep pan, add the chopped onions, garlic. cayenne pepper, smoked paprika, mixed herbs, and curry powder. Allow sauteing for about 2 minutes.
  • Add the diced carrots and potatoes, fry in the mixture until a bit tender, then add the shredded chicken and the chicken broth. Allow to boil up for about 2 minutes.
  • Then add 1 tablespoon of flour to thicken the sauce. Now taste for salt, because the chicken broth already has salt, if the need be, add more.
  • Add the chopped green onions and mix everything together. Cover and allow to simmer for about 2 minutes before removing it from the heat.

How to prepare the Chicken Pie Dough

  • In a mixing bowl or a stand mixer, pour the flour, add the sugar, nutmeg, salt, and the baking powder.
  • Add the butter or margarine and mix in the flour until it looks like a crumbly texture.
  • Make a well in the middle to add the egg and mix thoroughly in the mixture.
  • Add the milk or water and knead the dough until soft and smooth or until the right dough consistency is achieved. Do not overwork dough to avoid dense pie.
  • Cover and place the dough in the refrigerator to rest for about 30 minutes.

Cut, Fill, And Fold

  • After taking the dough out from the refrigerator , drop it on a floured surface and knead it a little bit more.
  • Cut into small pieces and grab your rolling pin.
  • Roll each cut-out flat on the rolling mat, use your pie cutter or any cutter to cut it out.
  • Add 2 teaspoons of the filling. Brush the tip with some whisked egg and fold.
  • If you are not using a pie cutter, use a fork to seal the tip, and remove the excess dough.
  • Repeat this process until everything is being folded.
  • You can also come out with different shapes for your pie. These shapes are used to express special occasions or just use them according to your desire.
  • The easiest way to achieving this is by making use of some cookies cutters.

Cut 2 pieces each, add the filling in one, cover with the second piece. Then use the fork to zeal the tip.

Baking the Pie

  • Set your oven to 175 degrees C or 350 degrees F
  • Bush your pan with butter to avoid sticking or line your baking tray with parchment paper.
  • Arrange your pie in the tray and brush the top with egg.

Place the tray in the oven and allow to bake between 20-25 minutes.

When they’re well cooked, remove from the oven and allow to cool.

Serve and enjoy with any chilled drink of your choice.

Ingredients
