However, I already have a recipe on this blog for the Nigerian party Jollof Rice. But this specific recipe is for those who are planning to make a delicious homemade party Jollof for a small indoor/outdoor party or a get-together for about 20 people.

Smoky Party Jollof rice

This smoky party jollof rice recipe will serve as a guide for you to know what and what would be needed for this scrumptious meal to grace your special occasions.

So If you follow this recipe to the letter, you’ll be amazed at how delicious your smoky party Jollof rice would turn out to be and how it would be the subject of discussion by your guests. Telling you how enjoyable your smoky party jollof rice is.

For this recipe you’ll need:

3 kg Rice

1 kg Red ball pepper (10-11)

1. kg fresh tomatoes or chopped tomatoes

600-gram tomato paste

3 cups beef/chicken stock

6 pieces bay leaves

500-gram onions

6- 7 Scotch Bonnet pepper (atarodo) or use based your preference

6 Garlic cloves

2 teaspoon curry

2 teaspoon thyme

15-16 Seasoning cubes

Butter/ margarine 100 g

Salt to taste

HOW TO COOK SMOKY PARTY JOLLOF RICE

  1. The first thing is to seasoning and cooks the meat until tender. You may choose to fry or grill afterwards (It may be chicken, turkey, or beef) Season with salt, seasoning cubes/powder, garlic powder, ginger powder, curry and thyme or rosemary and sliced onion.
  2. Extract the stock and keep it for later use(Water extracted from the meat)
  3. Blend the tomatoes, Redball pepper(tatashe), Scotch bonnet pepper (Atarodo), garlic cloves, and onions.
  4. Turn the blended ingredients in a pot bring them to a boil until the water is completely dry.
  5. In another cooking pot add the vegetable oil, add sliced onion and allow it to saute for about 2 minutes, then go ahead to add the tomato paste and fry for about 3 minutes.
  6. Add the boiled blended pepper, stir vigorously.
  7. Now start adding the seasonings: Curry, thyme, seasoning cubes/powder, salt and the chicken or meat stock earlier extracted. You may add more water 2- 3 cups of water that would be enough to cook the rice. (Do not add too much water as we don’t want soggy jollof rice) Cover and allow everything to get incorporated for about 5 minutes.
  8. Go ahead and start adding the washed rice(Rice should be washed about 5-6 times or until the water is clear) Then stir the rice in the sauce very well, add bay leaves and butter/ Margarine. Cover with foil first before covering with the pot lid.
  9. Cook on low heat, the foil steams the rice and cooks it. Check after the first 30 minutes, taste and adjust the seasoning if the need be. Then cover again
  10. Check again after 15- 20 minutes to see if the jollof rice is well cooked. (The overall cooking time varies on the type of rice used.)
  11. Use your turning stick to stir the rice through the bottom and evenly.
  12. Then cover only with the lid again for about 4 minutes and this time increase the heat to the highest to allow the rice to burn a little bit to give that smoky effect.
  13. Turn off the heat and stir evenly again through the bottom. Your smoky party Jollof rice is ready to be served. Serve with beef turkey or chicken.
  14. Your guests will surely enjoy this party smoky Jollof rice and would give you credit for a work well done.
